Whip the whites of 3 eggs with a pinch of salt until stiff peaks form.

Place the dough in a pastry bag or a bag with a cut corner and pipe onto a silicone mat in the shape of flat long cookies (like 'Savoiardi').

Bake in a preheated oven at 180° for 12 minutes (do not overbake!).

Dip the ready cookies in coffee for a few seconds to soak and place them at the bottom of the mold, spread with cottage cheese cream, then another layer of cookies and a layer of cream on top (there should be a total of 4 layers).
