Grate the ginger root.
- Fresh ginger: to taste

Mix flour with sugar, baking soda, and ginger.
- Wheat flour: 260 g
- Cane sugar: 130 g
- Soda: 0.5 teaspoon
- Fresh ginger: to taste

Pour the mixture into softened butter and knead with your hands until crumbly.
- Butter: 150 g

Add an egg to the mixture and beat it. If necessary, add a little flour to make the dough less sticky.
- Chicken egg: 1 piece
- Wheat flour: 260 g

Wrap the dough in plastic and place it in the refrigerator for 30 minutes.

Roll out the dough to a thickness of about 5 mm. Cut out shaped cookies with molds or a knife.

Line a baking tray with parchment paper, place the cookies on it, and bake in the oven for 8-10 minutes at 180 °C.
