Pear and Nutmeg Galette

Galette with pear and nutmeg is a refined dessert of European cuisine, harmoniously combining the fragility of the dough and the sweet juiciness of the pear. Mix 300g of flour, 0.2 tsp of baking powder with sugar (2.5 tbsp) and a pinch of salt. Add a pinch of baking soda, 75g of softened butter, and 70-80ml of milk. Thoroughly mix all ingredients in a blender (or with a whisk). Wrap the resulting dough in plastic wrap and place it in the freezer while preparing the filling.
- Wheat flour: 400 g

Melt 15 g of butter. Blend 1 egg white, 3 tbsp powdered sugar, melted butter, and 3 tbsp flour. Leave the mixture in the fridge for 10 minutes.

Peel the pears and slice them. Squeeze lemon juice over the pears, add a pinch of cinnamon, and let them sit in a bowl for a while.

Roll out the dough, evenly distribute the sweet filling (mixture) over the dough, and place the pear. Carefully close the edges, sprinkle with powdered sugar and nutmeg (nutmeg can be replaced with almond petals). Bake in the oven at 200* for 20-25 minutes.
