First, turn on the oven to 200 degrees.

For the test: slightly warm the whey in a pot, add yeast, sugar, 1 tablespoon of flour and let it sit for 5 minutes. Then add eggs, oil and pumpkin puree, mix well. Add flour (to a soft, non-sticky dough consistency) and knead the dough.
- Serum: 200 ml
- Dry yeast: 2.5 teaspoons
- Sugar: 1 glass
- Chicken egg: 2 pieces
- Vegetable oil: 2 tablespoons
- Pumpkin puree: 600 g
- Salt: pinch

Cover with a lid and leave in a warm place for half an hour.

For the filling: melt the butter, add it and sugar to the puree. Whisk cold water with starch and pour it into the puree. Whisk well, place on medium heat and cook until thickened. After cooking, cool in the refrigerator.
- Butter: 20 g
- Pumpkin puree: 600 g
- Sugar: 1 glass
- Water: 80 ml
- Cornstarch: 50 g

For the glaze: break the chocolate into pieces and place in a bowl, pour in milk and butter. Heat over medium heat, stirring constantly, until a smooth consistency is reached. Once the mixture cools down, add cognac and sour cream, and mix.
- Dark chocolate: 100 g
- Milk: 50 ml
- Butter: 20 g
- Cognac: 1 tablespoon
- Sour cream: 3 tablespoons

When the dough has risen, knead it and add flour if needed. Divide the dough into pieces (long like sausages), roll each into a flat shape, sprinkle with sugar, spread with filling, and roll into a log.
- Sugar: 1 glass

Cut the roll into pieces and place them on a baking sheet with the cut side up, close together. Brush each piece with sour cream and put it in the oven at 200 degrees on the top rack until cooked. Once the buns are ready, let them cool slightly and glaze each one.
