Sift two types of flour, add baking soda, salt, and sugar. Mix olive oil (sunflower oil can also be used) with boiling water, then add to the dry mixture. Knead the dough (if it crumbles, add a bit more boiling water). The dough should feel similar to honey cake dough. Let it rest for 15 minutes.
- Rye flour: 200 g
- Soda: 1.2 teaspoon
- Salt: pinch
- Sugar: 1.2 tablespoon
- Olive oil: 60 ml
- Boiling water: 60 ml
- Wheat flour: 50 g

For the filling: mix cottage cheese (preferably not liquid), egg, and sugar. Place cherries in a pot, add sugar (to taste) and a tablespoon of cornstarch, and simmer until thickened.
- Cottage cheese crumbly: 200 g
- Chicken egg: 1 piece
- Sugar: 1.2 tablespoon
- Cherry: 150 g
- Sugar: 1.2 tablespoon
- Cornstarch: 1 tablespoon

Let's return to the dough. Roll out the dough thinly (I rolled it out directly on parchment, otherwise it will be difficult to transfer the thin dough), place our cottage cheese mixture in the center with cherries on top, form a galette and bake in a preheated oven at 180 degrees for 30 minutes.
- Cottage cheese crumbly: 200 g
- Cherry: 150 g
