Pumpkin pie with 'Yubileynoye' cookie crumble is a cozy blend of French pastry with hints of autumn warmth. The delicate, slightly sweet pumpkin filling infused with cinnamon and butter creates a soft, velvety taste. The shortcrust pastry adds structure, while the crumble from 'Yubileynoye' cookies provides a light crunch, making the pie both tender and textured. The history of such a pie traces back to traditional French tarts but here it gains a special homely warmth. It can be served warm with whipped cream or chilled to reveal the richness of flavors. A wonderful option for family tea time or festive dessert that easily wins the hearts of cozy pastry lovers.

Preheat the oven to 190–200 degrees.

Peel the pumpkin and cut it into cubes, I got 2 cups.
- Pumpkin: 400 g

Melt butter in a saucepan, then add chopped pumpkin and simmer until soft, stirring occasionally. During cooking, add sugar and cinnamon.
- Butter: 70 g
- Sugar: 3 tablespoons
- Cinnamon: 1 teaspoon

While the pumpkin is being prepared, let's work on the dough. I sprinkle flour so that the dough doesn't stick; shortcrust pastry is quite unruly and tends to 'crumble'! So, I'm rolling out the dough for a round shape; the mold needs to be greased with butter beforehand. I distribute the dough in the mold so that the edges are 1-1.5 centimeters higher than the future filling.
- Shortcrust pastry: 500 g
- Butter: 70 g

After the pumpkin is cooked, let it cool for a bit, then use a blender to make a puree, add an egg, and mix into a homogeneous mass.
- Chicken egg: 1 piece

Crush the cookies and add them to the puree. Make sure the puree is not too runny; if it is, you can add more crushed cookies or 1-2 tablespoons of starch.

Spread the prepared filling (puree) over the dough, noting that the edges of the dough should be higher than the filling!

We put the pie in the oven for 30–40 minutes.

I prefer pie with whipped cream; in my case, I bought Dr.Oetker dry whipped cream, mixed it with 150 ml of milk, and whipped it for 3 minutes in a mixer. In my opinion, this is a worthy and tasty combination.
