Cottage cheese cookies with jam are a delicate treat with a crispy crust and soft center, where the sweetness of the jam harmoniously blends with the tender cottage cheese dough. This recipe comes from European cuisine, where baked goods made with natural ingredients and simple yet exquisite flavors are traditionally valued. The cookies have an airy structure thanks to the cottage cheese, while butter adds richness. The jam adds fruity notes, creating a pleasant contrast between tartness and sweetness. They are perfect for a cozy tea time or a light dessert after lunch. Their elegant butterfly shape makes them even more appealing. Preparation takes little time, and the result delights with its homemade taste and aroma.

1
In a large bowl, beat the cottage cheese, butter, sugar, and salt with a mixer on medium speed for about 2 minutes. Reduce the mixer speed to low. While continuing to beat, gradually mix in the flour. In the end, a crumbly mass should result.
- Cottage cheese: 170 g
- Butter: 230 g
- Sugar: 2 teaspoons
- Salt: pinch
- Wheat flour: 325 g
2
Knead the dough by hand until it stops sticking to your hands, then form it into a ball. Roll the dough on a lightly floured surface to a thickness of 3 mm. Cut out squares of about 6x6 cm from the dough. Place a teaspoon of jam or jelly in the center of each square. Carefully pinch two opposite corners of the square to form something like a butterfly. Do the same with the remaining squares.
- Wheat flour: 325 g
- Jam: 150 g

Place on a baking sheet lined with parchment paper. Put in an oven preheated to 175 degrees and bake for about 12 minutes.

Cool the ready cookies with jam, sprinkle with powdered sugar and serve.
