Buns in apple caramel with nuts are a true delight of Russian cuisine. They are made from a tender cottage cheese dough that becomes soft and airy after baking. The caramel from apple juice adds a sweet fruity note, while walnuts provide crunch and rich flavor. The bright strawberry coating makes the buns especially attractive and juicy. Pour the cottage cheese into a bowl.
- Cottage cheese: 300 g

We take a separate plate and mix flour, baking powder, and a pinch of soda in it.
- Wheat flour: 500 g
- Baking powder: 1 tablespoon
- Soda: pinch

Next, we pour all the dry ingredients into the bowl with the cottage cheese.

Knead carefully by hand until crumbs form.

Then we pour in the milk and start kneading until a dough forms.
- Milk: 350 ml

We wrap this dough in plastic wrap and place it in the refrigerator for about 30 minutes.

Take the dough out of the fridge and divide it into as many parts as you need. Start rolling each part into a rectangle.

While the rectangles are on the table, let's prepare the caramel.

Caramel: Pour sugar into a container, add clear apple juice, and place it on low heat. Stir until the caramel boils (i.e., the mass should be covered with bubbles and become transparent). To check readiness: add a drop of caramel to very cold water. If it hardens, you can turn off the heat. The main thing is that the caramel should not turn sugary, otherwise, everything will spoil, and it won't be what you need.
- Sugar: 2 glasss
- Apple juice: 125 ml

Immediately spread the ready syrup on the rectangles (don't skimp on the caramel: the more, the better!!!).

Next, we generously sprinkle the coarsely chopped nuts as filling.

Then we add finely chopped strawberries to the nuts. (don't hold back either).

Next, we dip the whole bun in caramel.

And we wrap it in very finely chopped strawberries (it can be grated), so that the entire roll is completely covered in it.
