Preheat the oven to 180 degrees (mark 5).

Mix flour with baking soda, a pinch of salt, and vanilla.
- Wheat flour: 150 g
- Soda: 0.5 teaspoon
- Salt: pinch
- Vanillin: 0.3 teaspoon

Add soft room temperature butter to the mixture and mix with a mixer. Then add cottage cheese and mix well (you can also use a mixer). Knead the dough.
- Butter: 125 g
- Cottage cheese: 125 g

Roll out the dough to a thickness of 0.5 mm. Cut out circles with a diameter of 8 cm.

Take a large plate and pour sugar into it. Dip each dough circle in sugar on one side, then fold it in half with the sugar side inside, then dip one side in sugar again and fold it in half with the sugar inside. This creates an envelope. Also coat one side in sugar, leaving the other untouched.
- Cane sugar: 100 g

Transfer the prepared cookie envelopes to a baking sheet lined with parchment paper, with the sugar side facing up. Bake for 10-12 minutes until the cookies are golden.
