Sugar-Free Oatmeal Banana Raisin Cookies
4 servings
30 minutes
This is a classic recipe for healthy oatmeal cookies. The raisins can easily be replaced with other dried fruits or candied fruits, enriched with nuts, or even replaced with tempting chocolate chips (as chocolatiers often do today). However, I strongly recommend not to replace the banana with anything: there are enough sweet fruits, but soft aromatic bananas in combination with rolled oats and a creamy accent of homemade baking... It's worth trying.

1
In a deep bowl, mix the oatmeal, sifted (wheat) flour, a spoon of baking powder, cinnamon, and a pinch of salt.
- Oat flakes: 85 g
- Whole grain flour: 100 g
- Baking powder: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Salt: pinch
2
Mash a couple of ripe bananas with a fork (or blender) into a puree, add soft butter and turn it into a homogeneous mixture.
- Bananas: 2 pieces
- Butter: 60 g
3
Mix the soaked and dried raisins with the flour and banana parts, and knead the dough.
- Seedless raisins: to taste
4
Place the future cookies on a parchment-lined baking sheet and bake in a preheated oven at 170-190°C for about 18-20 minutes.
