Mix warm kefir with baking powder and let it sit for 10 minutes. The mixture should roughly double in size.
- Kefir: 300 ml
- Baking powder: 4 teaspoons

Wash the raisins, cut them if large, and dry. Mix with 1 teaspoon of flour.
- Raisin: 100 g
- Premium wheat flour: 220 g

Grate the zest of one lemon.
- Lemon zest: 2 teaspoons

Mix cottage cheese, vanilla sugar, lemon zest, and stevia with a mixer (a hand blender can be used, but a mixer is better).
- Cottage cheese: 100 g
- Vanilla sugar: 8 g
- Lemon zest: 2 teaspoons
- Stevia extract: to taste

Pour in the kefir infused with baking powder. Whisk again with a mixer.
- Kefir: 300 ml

Add sifted (!) flour and raisins. Mix with a spoon (!!!).
- Premium wheat flour: 220 g
- Raisin: 100 g

Fill the cake mold 2/3 full, as it will rise during baking.

Bake in a preheated oven at 180 degrees for about 1 hour. Check readiness with a match or toothpick.
