Cake with grapes and walnuts

8 servings

60 minutes

This cake with grapes and walnuts is a delicate embodiment of flavor harmony. Its base is an airy sponge cake made with care and patience, soaked in sour cream frosting with honey to create a soft, juicy texture. The top layer, covered with melted chocolate and crunchy nuts, adds depth of flavor and sophistication. Sweet grapes provide freshness and a light fruity tartness that balances the sweetness of the other components. This treat is perfect for festive gatherings or cozy home evenings when you want to indulge in something truly special. Perhaps this recipe is inspired by European traditions of combining fruits and nuts in desserts, making it not only delicious but also refined. Enjoy your meal!

Cooking steps

First, we make a classic sponge cake. Carefully separate the egg whites from the yolks. Start beating the egg whites at the lowest mixer speed. Gradually add sugar and vanilla to the egg whites while continuing to beat. Beat until the egg white mixture becomes white and dense (as some chefs check, you should turn the bowl with egg whites over your head and they shouldn't fall on you). Next, beat the yolks separately. Gently mix the egg whites with the yolks using a wooden spatula (very slowly and carefully, without rushing).

    Required ingredients:
    1. Sugar1 glass
    2. Vanillin pinch
    3. Chicken egg4 pieces

Remove the mixer and start sifting flour into the bowl with the egg whites and yolks, gently mixing with a spoon from bottom to top. Pour the prepared batter into a greased pan and place it in a preheated oven at 190-200°C for 20-25 minutes. Check readiness with a match (insert into the batter, and if it comes out dry, the sponge cake is ready). Remove the pan, turn the sponge cake onto a plate (rack, towel), and let it cool.

    Required ingredients:
    1. Wheat flour1 glass

Take a chocolate bar or 1/2 bar of chocolate (I don't like bitter, so I took milk chocolate) and melt it in a water bath. Add cream and stir constantly until the mixture thickens. Whip sour cream and powdered sugar with a mixer until creamy.

    Required ingredients:
    1. Milk chocolate1 piece
    2. Cream 20% to taste
    3. Sour cream 25%1 glass
    4. Powdered sugar to taste

Now we start assembling the cake. Cut the sponge in half, resulting in 2 layers. Spread sour cream frosting on one layer and drizzle with 1 tbsp of honey. Cover with the second layer and do the same. Coat the top layer with melted chocolate (and the sides of the cake too), sprinkle with walnuts, and decorate with grapes (I had seedless kishmish). The cake is ready, enjoy your meal)

    Required ingredients:
    1. Sour cream 25%1 glass
    2. Liquid honey2 tablespoons
    3. Milk chocolate1 piece
    4. Crushed walnuts to taste
    5. Red seedless grapes50 g
