First, we make a classic sponge cake. Carefully separate the egg whites from the yolks. Start beating the egg whites at the lowest mixer speed. Gradually add sugar and vanilla to the egg whites while continuing to beat. Beat until the egg white mixture becomes white and dense (as some chefs check, you should turn the bowl with egg whites over your head and they shouldn't fall on you). Next, beat the yolks separately. Gently mix the egg whites with the yolks using a wooden spatula (very slowly and carefully, without rushing).
- Sugar: 1 glass

Remove the mixer and start sifting flour into the bowl with the egg whites and yolks, gently mixing with a spoon from bottom to top. Pour the prepared batter into a greased pan and place it in a preheated oven at 190-200°C for 20-25 minutes. Check readiness with a match (insert into the batter, and if it comes out dry, the sponge cake is ready). Remove the pan, turn the sponge cake onto a plate (rack, towel), and let it cool.
- Wheat flour: 1 glass

Take a chocolate bar or 1/2 bar of chocolate (I don't like bitter, so I took milk chocolate) and melt it in a water bath. Add cream and stir constantly until the mixture thickens. Whip sour cream and powdered sugar with a mixer until creamy.
- Milk chocolate: 1 piece
- Cream 20%: to taste
- Sour cream 25%: 1 glass
- Powdered sugar: to taste

Now we start assembling the cake. Cut the sponge in half, resulting in 2 layers. Spread sour cream frosting on one layer and drizzle with 1 tbsp of honey. Cover with the second layer and do the same. Coat the top layer with melted chocolate (and the sides of the cake too), sprinkle with walnuts, and decorate with grapes (I had seedless kishmish). The cake is ready, enjoy your meal)
