Lenten honey muffins

4 servings

25 minutes

Vegan honey muffins are delicate pastries with a deep honey aroma and a light caramel note. The history of such treats traces back to European culinary traditions, where honey has long been used as a natural sweetener. These muffins are characterized by a soft texture, light airiness, and pleasant sweetness. The addition of raisins gives the dough interesting flavor accents, while chocolate frosting and coconut flakes add sophistication. They are perfect for vegan diets, contain no animal products, and make an excellent addition to tea time or a cozy family evening. The versatility of the recipe allows for experimentation with add-ins to create new flavor variations. Easy to make and incredibly delicious, these muffins instantly win the hearts of sweet lovers.

Cooking steps
  • 1

First, we boil water. The water must be boiled. We cool it down so that it is hot, but not boiling.

    Required ingredients:
    1. Water250 ml
  • 2

Pour water into a deep bowl, add honey, sugar, a pinch of salt, and odorless vegetable oil (very important!). Mix thoroughly until a homogeneous mass.

    Required ingredients:
    1. Water250 ml
    2. Honey2 tablespoons
    3. Sugar0.5 glass
    4. Salt pinch
    5. Vegetable oil0.5 glass
  • 3

Sift the flour. Mix with baking soda. Add to our liquid homogeneous mass and beat with a fork or whisk until lumps disappear. (Important: the gluten content of flour varies; I used about 2 cups, which is not full 2 cups; do not add all the flour at once; the batter should be pourable, thinner than pancake batter).

    Required ingredients:
    1. Wheat flour2 glasss
    2. Soda1.5 teaspoon

You can enhance it by adding dried fruits, nuts, or anything else to taste. I added 3 handfuls of raisins.

    Required ingredients:
    1. Raisin to taste
  • 5

Pour into molds about 2/3 full, the muffins will rise. Bake in a preheated oven at 200°C for about 10-20 minutes. You will see they are ready when the muffins turn a brownish-golden color.

The cupcakes are ready. They can be served like this. But I prepared a glaze separately: I melted half a bar of dark chocolate with a little water in a water bath. I mixed it well. I dipped each cupcake in this glaze and in coconut flakes. The taste is amazing, it gets eaten right away.

    Required ingredients:
    1. Dark chocolate to taste
    2. Sweet coconut flakes to taste
