The plain pastries 'Zhavoronki' are a traditional Russian baked good symbolizing the arrival of spring and the awakening of nature. They resemble small birds bringing warmth and joy. Mix softened butter and eggs; there's no need to fully break the lumps, they will disappear during the final mixing.
- Butter: 200 g
- Chicken egg: 2 pieces

We add sugar – I measure it by handfuls, if this option suits you – one handful or 2 tablespoons + a pinch of salt, mix it.
- Sugar: 2 tablespoons
- Salt: pinch

We add yogurt, I have it cold.
- Kefir: 1 glass

While the dough is liquid, we add baking soda, no need to extinguish.

Next, we add flour; the dough should be elastic like for pies. One criterion for readiness is when it stops sticking to the hands.

We roll a small ball and then form a 10 cm long rope from it.

We tie a knot from the resulting cord.

One end becomes a head with a beak, the other end a tail, which should be slightly trimmed for better resemblance.

Sprinkle the baking tray with a little flour and place the birds on it.

Bake in a preheated oven at 190-200 degrees for 30-40 minutes until golden brown. (I have an old electric stove, so the temperature and time may vary depending on your equipment).
