Lenten Citrus Pie

The recipe is taken from the social media group "Lenten Meal". The filling uses both lemon and orange, which gives a voluminous taste, a pleasant sourness, and an amazing aroma. There is one danger with the dough: it can easily become gummy and not bake under the moist filling. Therefore, if you do not want to clog the citrus juiciness with starch or flour, it is better to first put the cake in the oven separately, letting it bake, and then put the filling and return the pie to the oven so that the orange -lemon puree turns into something like thick marmalade.

    Mix the flour with a pinch of salt, add baking powder and sugar. Stir everything together.

    Add butter. Pour in a few tablespoons of water. It's better not to pour as many tablespoons of water as I indicated (flour varies), but to add gradually until the dough feels like a smooth, slightly sticky ball. Immediately separate a small amount of dough (the size of a chicken egg), wrap it in plastic wrap, and place it in the freezer for 1-1.5 hours.

    Place the remaining dough in a greased mold (I have a small one) and form the edges to hold the filling (4-5 cm), then put it in the refrigerator.

    For the filling, oranges and lemon should ideally be passed through a meat grinder, but I don't have one. I chopped them in a blender on the lowest speed. If you chop in a blender, the consistency will be moist; if in a meat grinder, it will be dry. Remove seeds and skin from citrus fruits and only then chop. Add sugar to taste; I added 1.5 tablespoons, which was not enough because the pie was sour from the lemon, I recommend adding more. Add starch to the filling and leave it in a separate bowl.

    Place the filling in the baking dish so that it doesn't go over the edges, and grate the frozen dough on a coarse grater.
