First, boil 3 sprigs of mint in 200 ml of milk at medium temperature for 6 minutes without allowing it to boil. Then cool the mint milk with the lid closed, without removing the mint. You will need a small amount of milk, but you cannot boil less.

While the milk cools, we start preparing the dough. In a bowl, mix flour, baking soda, salt, and brown sugar. Add 140 g of room temperature butter and eggs, mixing until smooth. Finally, add the zest of two limes, 1.5 tablespoons of lime juice, and 1.5 tablespoons of cooled mint milk. Place in a preheated oven at 170 degrees for 30 minutes (for larger molds).
- Wheat flour: 120 g
- Soda: 0.5 teaspoon
- Salt: pinch
- Cane sugar: 120 g
- Butter: 300 g
- Chicken egg: 2 pieces
- Lime: 2 pieces
- Milk: 200 ml

We prepare the cream. Whip the remaining butter until it becomes airy and light (5-10 minutes). Add powdered sugar in several stages. Finally, add 2 tablespoons of mint milk, 3 tablespoons of rum, and whip again. After all the manipulations, the cream should be white.
