Line a 20×10 cm cake pan with parchment paper. In a heatproof bowl, mix broken chocolate, cubed butter, and honey. Place the bowl over a pot of gently boiling water and melt, stirring occasionally.
- Dark chocolate: 200 g
- Butter: 100 g
- Honey: 1 tablespoon

Meanwhile, chop the ginger with a knife, break the cookies and mix them, pour melted chocolate over and stir. Pour the resulting dough into a mold and smooth the surface. Cool it down, then place it in the refrigerator for several hours (at least 4) to let the tart set.

Carefully grasp the edges of the parchment paper, remove the tart from the mold, transfer it to a board, and cut it into 12 slices with a sharp knife.
