Gently mix the cream with the egg yolks (do not whip).
- Cream 20%: 400 ml
- Egg yolk: 4 pieces

Extract seeds from the vanilla pod. Add the seeds and the vanilla pod to the cream-egg mixture.
- Vanilla pod: 1 piece

Put the mixture on low heat and cook without boiling for 7-10 minutes. The mixture should thicken but not boil. Remove the vanilla pod. If the mass has curdled, it can be blended in a blender.

When the thickened mixture cools down, add honey.
- Honey: 1 tablespoon

Pour the prepared and cooled mixture into the ice cream maker and let it mix for 30 minutes.
