Algerian semolina cookies are a traditional treat reflecting Algeria's culinary heritage. They are easy to make but have a unique taste: tender, crispy on the outside and soft inside. Semolina gives the dough a special texture, while a slight saltiness balances the sweetness of honey or jam served with it. These cookies are fried in hot oil, creating a golden crust that crunches with every bite. The dish is perfect for tea time and pairs well with traditional drinks like mint tea. In some regions, they are made for special occasions, highlighting the importance of hospitality and family traditions. The simplicity of ingredients makes these cookies accessible, while their taste has been loved for generations.

1
Pour 2 cups of semolina into a deep bowl, add salt, and mix with your hand.
- Semolina: 2 glasss
- Salt: 2 teaspoons
2
Add 3 tablespoons of vegetable oil and mix everything (again with your fingers).
- Vegetable oil: 3 tablespoons
3
Pour half a glass of water, mix thoroughly, add a little more water, and knead the dough into a tight ball.
- Water: 1 glass
4
Divide the dough into three to four smaller balls. Roll the balls into sausages with a diameter of 1.5 cm.
5
Press the sausages with a knife and cut into pieces 3-4 cm long.
6
Pour vegetable oil into the heated pan so that the cookie pieces are half submerged in the oil.
- Vegetable oil: 3 tablespoons
7
When the oil is heated, place the cookie pieces and fry on one side until slightly golden, then flip. When the cookies harden and turn golden on both sides, place them on a napkin to drain the oil and cool.
8
Serve the ready cookies with honey, jam, or simply plain.
