Cinnamon and Sugar Buns

Cinnamon and sugar buns are the embodiment of coziness and warmth in Swedish cuisine. This delightful dessert, known as 'kanelbullar', emerged in Sweden in the early 20th century when cinnamon became more accessible. They have a tender, airy texture, a rich aroma of spices, and the sweetness of caramelized sugar. Cardamom in the dough gives the buns a light citrus note, while the cinnamon filling fills them with spicy warmth. These buns traditionally accompany cozy family tea times and are enjoyed with coffee or hot chocolate. They are perfect for breakfast, snacks, or festive tables. Each bite leaves a pleasant warmth and sense of coziness in the mouth.

Dissolve the yeast in warm milk, add 60-70 grams of sugar, sprinkle the milk-yeast mixture with 1-2 tablespoons of flour (do not mix) and leave for 15 minutes.

After 15 minutes, add the remaining flour and salt to the yeast base and knead the dough. Add cardamom and about 70 grams of softened butter, knead the dough (knead by hand for 20 minutes, by mixer for 8-10 minutes).

Place the dough in a deep bowl, tightly wrap it with plastic wrap, and set it in a warm place for 1-1.5 hours to rise.

In a bowl, mix 2 tablespoons of cinnamon and 2 tablespoons of sugar.

Knead the prepared dough by hand, roll it into a square about 45 cm. Grease the dough with softened butter, leaving about 1 cm bare edges, and sprinkle with cinnamon-sugar mixture.

Roll the dough with the filling into a roll, sealing the edges, and cut the roll into equal trapezoid shapes with a very sharp knife.

Place the shapes on a baking sheet lined with parchment paper, 5 cm apart. Cover with a towel and let rise for about 40 minutes. Then brush the rolls with beaten egg yolk and sprinkle with sugar or cinnamon to taste.

Send to a preheated oven at 210–200 degrees for 20–25 minutes until the buns turn brown-golden.
