Preheat the oven to 180 degrees.

First, we make the dough. Cut cold butter into small pieces. Mix with sugar (2/3 cup), flour (1 cup), and 0.5 tsp baking powder. Add one egg and knead the dough. You may need a bit more flour. The dough should not stick to your hands. Set aside 1/3 of the prepared dough, cover it with plastic wrap, and place it in the freezer. Cover the remaining dough with plastic wrap and put it in the refrigerator. You can use your favorite shortcrust pastry recipe.
- Butter: 100 g
- Sugar: 1 glass
- Wheat flour: 1 glass
- Baking powder: 1 teaspoon
- Chicken egg: 2 pieces

Preparing apple filling: wash the apples, cut them in half, remove the core. Slice into thin wedges.

We prepare the cottage cheese filling. Mash the cottage cheese with a fork until smooth. Add kefir, egg, remaining sugar (1/3 cup), vanilla sugar, and remaining baking powder (1/2 tsp). Mix until homogeneous. The mixture should have the consistency of thick sour cream. It's better to taste the mixture; it should be sweet enough.
- Cottage cheese: 300 g
- Kefir: 3 tablespoons
- Chicken egg: 2 pieces
- Sugar: 1 glass
- Vanilla sugar: 2 teaspoons
- Baking powder: 1 teaspoon

Take the dough out of the fridge and place it in a baking dish lined with greased parchment. The dough can be rolled out thinly and placed in the dish (don't forget about the edges). I just place the dough and 'press' it into the shape, forming the edges. The dough should be very thin.

Evenly place apples on top. Pour the cottage cheese filling over it. Take the dough out of the freezer and grate it on top with a coarse grater. It may not cover all the cottage cheese.
