Slovenian charlotte is a delicate and fragrant pie that combines lightness and fruity freshness. This recipe originates from traditional European kitchens where apples were the base of many desserts. The crispy caramelized crust complements the softness of the dough, while the combination of apples with pears or cherries adds a special depth of flavor. It is best served warm with a scoop of vanilla ice cream or a spoonful of thick sour cream to highlight the sweetness of the fruits. Separate the yolks from the whites. Put the whites in the fridge. Whisk the yolks with sugar.
- Chicken egg: 2 pieces
- Sugar: to taste

Melt the butter (200 g) to a soft consistency (you can use the microwave for 30 seconds, I use a water bath and stir constantly). Combine with the yolks and mix well.
- Butter: 210 g

Add sifted flour and baking soda (you can extinguish it with vinegar, I usually use lemon juice), mix well.
- Wheat flour: 2 glasss
- Slaked soda: 1 teaspoon

Add milk while stirring. Take the egg whites out of the fridge, whip them, and gently combine with the batter until a uniform airy mass is formed. The batter should be slightly thicker than for pancakes.
- Milk: 200 ml

Preheat the oven to 180 degrees. Cut the fruits into wedges (in this case, apples, but I highly recommend combining apples with pears, cherries, plums; there can be many variations).
- Apple: 500 g

Take a form (can be detachable, I use glass which is very convenient for cooking), grease with butter (10 g) and sprinkle with sugar. I use about 0.5 cup. If you like it sweet, feel free to use a cup for a more caramelized filling.

Place apple slices on sugar. Pour the batter over the fruits and spread evenly. Bake at 180–190 degrees for 45–50 minutes. Check for doneness.

Remove from the oven, let it cool, take the charlotte out of the mold and flip it over with the fruits on top.
