Break the chocolate into pieces and melt it with cubed butter in a water bath, stirring continuously with a silicone spatula until smooth. Set the resulting chocolate sauce aside and let it cool to a warm state.

While the sauce cools, crack the eggs into a bowl (preferably slightly chilled) and whisk until frothy, gradually adding brown sugar (200 g). It's best to whisk with a mixer for five minutes.
