Vanilla galette with wild berries and apricot

Vanilla galette with forest berries and apricot is an exquisite dessert from European culinary tradition. Simple to prepare yet incredibly refined, it combines crumbly vanilla dough with a rich berry-apricot filling. Blueberries, gooseberries, and black currants add a slight tartness, while sweet apricots contribute tenderness and depth of flavor. The galette is perfect for a cozy family tea or a romantic dinner, and its vanilla aroma fills the home with warmth and comfort. The open baking method caramelizes the fruits, creating a harmony of sweet and tart flavors. This dessert can be served warm with a scoop of ice cream or chilled to enjoy its crispy texture.

1
Rub softened butter (100 g) with flour into crumbs.
- Butter: 150 g
- Wheat flour: 250 g
2
Add an egg and vanilla sugar (to your taste) to the resulting crumbly butter-flour mixture.
- Chicken egg: 1 piece
- Vanilla sugar: to taste
3
Knead a soft, elastic dough (similar in consistency to plasticine). Put the dough in the refrigerator while preparing the filling.
4
Heat a skillet over medium heat and add 50 g of butter. Add the berries (any berries of your choice) to the skillet and simmer for 5–7 minutes, stirring. Add sugar (the amount varies with the acidity of the berries) and simmer for another 5–7 minutes.
- Butter: 150 g
- Blackcurrant: 0.5 glass
- Gooseberry: 0.5 glass
- Blueberry: 0.5 glass
- Sugar: 100 g
5
Prepare the apricots - cut them into not too thick slices (I use canned ones as they are sweeter).
- Canned apricots: 8 pieces
6
Roll out the chilled dough to about 30 cm in diameter and transfer it to baking paper.
7
First, spread the berry filling on the dough, leaving 2-3 cm uncovered edges (for folding), then place the apricots on top. Fold the edges.
8
Bake in a preheated oven at 200 degrees for 20-25 minutes. The finished pie can be sprinkled with powdered sugar.
