Cheesecake with cottage cheese and sour cream

Preheat the oven to 170 degrees. Line the pan with parchment paper.

Blend the cottage cheese and cream until smooth.
- Cottage cheese 18%: 800 g
- Cream 35%: 120 ml

Mix the eggs and vanilla sugar, blend with a blender (the classic recipe calls for 200 g of sugar and a pinch of vanilla sugar, but we don't really like overly sweet cakes, so I replace it with 100 g of vanilla sugar, which makes it more aromatic and still sweet enough).
- Chicken egg: 3 pieces
- Vanilla sugar: 100 g

For the crust: crush the cookies as finely as possible, mix with melted butter, and press into the bottom of the pan.
- Cookie: 400 g
- Melted butter: 100 g

Pour the cottage cheese mixture on top (the consistency is like very thick sour cream).

Send to the oven for 50 minutes.

While the pie is in the oven, mix sour cream, sugar, and a pinch of vanillin.
- Sour cream 25%: 250 g
- Sugar: 2 tablespoons
- Vanillin: 1 g

After 50 minutes, pour the mixture into the pie and bake for another 7 minutes at 200 degrees.

Take out of the oven and put in the fridge overnight.

In the morning, you can enjoy a delicious cheesecake topped with berries (like blueberries) or sliced fruits. But I especially love buying Dr. Oetker dessert and pouring it over. It comes in cherry (as shown) and forest berry flavors. You can also make variations with jelly on top (like canned peaches in jelly). It all depends on your desires and imagination.
