Peach Pie

Peach pie is the embodiment of home comfort and warm summer days. Its roots go back to European cuisine, where sweet fruit pies have long become a classic. The delicate shortcrust pastry, enriched with butter, turns into a crispy base, while juicy peaches soaked in sugar and lemon zest provide a delightful balance of flavors. This pie is perfect for a cozy tea time, family celebration, or simply as an excuse to treat yourself to something special. The light citrus acidity complements the sweetness of the peaches, and the golden crust gives the pie an appetizing appearance. First, prepare the dough: mix butter, 225 g of flour, 2 tsp of sugar, and salt, and use a fork to crumble everything into a fine uniform mixture. Then add cold water and knead the dough by hand until smooth. Divide it in half, roll into balls, and refrigerate for at least 30 minutes, covered with plastic wrap.
- Butter: 90 g
- Wheat flour: 245 g
- Sugar: 2 teaspoons
- Salt: 0.3 teaspoon
- Water: 80 ml

Meanwhile, prepare the peaches: bring water in a pot to a boil and prepare a bowl of cold water. Make shallow cross cuts on the washed peaches and dip them in boiling water for 30-60 seconds. Remove with a slotted spoon and quickly transfer to the bowl of cold water. If the containers are small, it's better to do this one peach at a time.
- Water: 80 ml

Peel the cooled peaches, cut them in half, remove the pits, and slice each half into 4 wedges. Place the peaches in a deep bowl, add 100 g of sugar, 20 g of flour, lemon juice, and zest, mix well by hand, and let sit for 5 minutes.

Roll out the chilled dough into 2 disks according to the size of the pan. Place the bottom half, spread it out, evenly layer the peach filling with all the juice, cover with the second half, and seal the edges tightly.

Bake at 200 degrees for the first 30 minutes, then reduce the temperature to 180 degrees and bake for another 20-25 minutes. The bottom should be well cooked.
