Airy protein cake with berries is an elegant treat from Italian cuisine, where the delicacy of texture and harmony of taste are valued. The cake's lightness is ensured by whipped egg whites that turn into airy foam and are then baked to a golden crust. The berry layer, made from fresh fruits with added sugar and starch, gives the dessert a pleasant tartness and juiciness. This cake is perfect for the spring-summer season when berries are abundant. It can be served as a standalone dessert or accompanied by a delicate vanilla sauce. Its lightness and sophistication make it a wonderful conclusion to lunch or a romantic dinner.
