Fluffy pancakes with kefir

Mix kefir with salt and sugar, add flour and baking soda. About 200 g, but it varies depending on the thickness of the kefir and the quality of the flour.
- Kefir 2.5%: 400 ml
- Sugar: 3 tablespoons
- Salt: to taste
- Wheat flour: 200 g
- Soda: 1 teaspoon

Quickly mix the dough to avoid lumps. I don't use a mixer for this purpose; I use a whisk or fork instead. The dough turns out like very thick sour cream.

The pan should have a thick bottom. Heat the pan, add 1 teaspoon of vegetable oil to the batter, mix quickly, and place small pancakes in the greased hot pan.

Do not spread the pancakes. Fry on low heat under a lid.
