Oatmeal eclairs

Oatmeal éclairs are an unusual and healthy reinterpretation of the classic French dessert. Their base is ground oatmeal, giving the pastry lightness and tenderness as well as health benefits. Preparation starts with boiling water with butter, then oatmeal flour is added to create a thick dough. The egg whites make it airy, and baking at high temperature ensures a golden crust. Unlike traditional éclairs, the filling here can be not only sweet: yogurt, cottage cheese, fresh fruits – it all depends on your preferences. These éclairs are perfect for a light breakfast or an exquisite yet healthy dessert.

Blend the oats until they reach a flour-like consistency.
- Oat flakes: 160 g

Boil water with oil.
- Water: 250 ml
- Vegetable oil: 55 ml

Pour the sifted flour with salt into the boiling liquid (you can add a sweetener, any spices), and stir for a couple of minutes until thickened.
- Salt: pinch

Cool slightly, mix in the egg whites (or whole eggs, which will increase calories and fat), and mix well by hand or with a mixer.
- Chicken egg: 3 pieces

Line the baking tray with parchment, spoon the dough spaced apart.

Send to a preheated oven at 200 degrees for 15-30 minutes (until golden brown).

Fill ready eclairs with your favorite fruits, cottage cheese, yogurt, or ice cream.
