Turf pie, also known as Turbakook, is a tender and aromatic dessert with a rich chocolate flavor and airy cheese filling. Its name is related to its appearance resembling layers of peat. This pie, popular in Russian cuisine, combines the softness of cottage cheese, the sweetness of vanilla, and the richness of cocoa. The preparation involves creating a shortcrust pastry that forms crispy crumbs enveloping a delicate creamy mass. Ideal as a cozy treat for tea or coffee, it is perfect for family gatherings and festive evenings. The turf pie impresses with its contrast of textures: crumbly and crunchy on top while creamy and tender inside. Its ease of preparation makes it a favorite recipe for those who appreciate homemade baked goods with rich flavor.

1
Mix the ingredients for the dough and rub them by hand until crumbly (I ended up with something more like sand).
- Butter: 250 g
- Cocoa: 4 tablespoons
- Sugar: 200 g
- Wheat flour: 400 g
2
For the filling, beat the eggs with sugar until frothy, add cottage cheese, sour cream, vanillin, and flour.
- Chicken egg: 4 pieces
- Sugar: 200 g
- Cottage cheese: 500 g
- Sour cream: 100 g
- Vanillin: to taste
- Wheat flour: 400 g
3
Grease a detachable mold with a diameter of 26-28 cm (I have 24) with oil and sprinkle a little more than half of the crumbs.
- Butter: 250 g
4
Carefully pour the filling on top. Then gently spread the remaining crumbs as the top layer.

Bake at 180 degrees for 40–50 minutes.
