This dessert draws inspiration from traditional Russian berry soufflé and pastila recipes, combining them into a light, melt-in-your-mouth texture. Thaw the strawberries. Save the juice. Blend the berries into a smooth puree.
- Frozen strawberries: 200 g

Add gelatin, let it swell for a few minutes (follow the instructions on the package), then add powdered sugar and lemon juice, mix and heat on low heat, stirring until the gelatin is completely dissolved. Do not boil!
- Gelatin: 15 g
- Powdered sugar: 150 g
- Lemon: 0.5 piece

Now let the mixture cool to room temperature and beat with a mixer on high speed for 5-7 minutes until the mixture significantly increases in volume, lightens, and thickens.

Line the mold with baking parchment, spread the strawberry mixture on the paper, and smooth it out. Leave it in a cool place uncovered to set for a few hours.

Once the mass has set, flip the mold onto a surface dusted with powdered sugar and remove the paper.
