Ginger and cinnamon cookies are a fragrant and spicy treat rooted in French culinary tradition. They perfectly combine the warmth of cinnamon, the spiciness of ginger, and the depth of freshly brewed coffee, creating a rich, warming flavor. Honey adds a delicate sweetness to the cookies, while almonds provide a refined crunch. These cookies are not only delicious but also have a special charm — they can be shaped into figures for a personal touch in baking. They pair excellently with a cup of tea or coffee, making them an ideal accompaniment for a cozy evening or festive tea party. The simplicity of preparation makes them accessible even for novice cooks, while their taste is unforgettable. Such a dessert would make a wonderful treat for guests or a heartfelt gift.

1
Grind the sugar and cloves.
- Sugar: 0.5 glass
- Carnation: 1 teaspoon
2
Mix all the spices and the clove ground with sugar.
- Ground cinnamon: 2 teaspoons
- Ground ginger: 0.5 teaspoon
- Carnation: 1 teaspoon
3
Add the dry mixture to the butter and mix thoroughly. Now it's time for the honey. Mix everything until a smooth, silky mass.
- Vegetable oil: 0.5 glass
- Honey: 2 tablespoons
4
Brew natural coffee, cool it down, and add 4 tablespoons of liquid to our mixture.
- Freshly brewed coffee: 4 tablespoons
5
Add baking soda. Crack an egg.
- Soda: pinch
- Chicken egg: 1 piece
6
Sift the flour. Mix it. Mix the dough well. It should be uniform and strong. It should be comfortable to roll it out to a thickness of about 3 mm.
- Wheat flour: 3 glasss
7
Divide the dough into about 6 parts. Form a ball and roll it out. Cut with a mold. I used a bear and heart shape. I gave each bear an almond in its paws. I made the eyes and nose using a toothpick.
- Almond: 100 g
8
Line the baking tray with parchment paper. Arrange the cookies compactly (if the dough is very soft, you can roll and cut it directly on the parchment).
9
Bake at 180 degrees for about 5–7 minutes. During this time, you will be able to prepare the next batch.
