Cake "Honey cake" with berries

The 'Medovik' cake is a classic of Russian cuisine known since the 19th century. Its history begins at the court of Emperor Alexander I, where honey cakes and delicate cream captured the hearts of the aristocracy. This cake has a delightful balance of sweetness and a light caramel note, highlighted by airy whipped cream. The addition of fresh berries gives it a refreshing contrast, making it an ideal dessert for festive tables. In a water bath, melt butter (100 g) in a bowl, add sugar and honey. Mix until smooth. After a couple of minutes, add baking soda (1 teaspoon without a heap), stir and heat for 1 minute, then remove from the water bath.
- Butter: 400 g
- Sugar: 200 g
- Honey: 2 tablespoons
- Soda: 1 teaspoon

Add eggs and flour to a bowl, knead the dough (it shouldn't be too stiff). Place the dough in the refrigerator for 30-40 minutes.
- Chicken egg: 2 pieces
- Wheat flour: 400 g

Next, we roll out the dough into a rope and divide it into 8-9 equal parts.

Roll each piece thinly and bake in a preheated oven at 200 degrees for 3-5 minutes until golden.

We remove the cakes from the tray while they are hot and trim the excess using a plate (at least 20 cm in diameter).

While the cakes cool, we prepare the cream. Beat 300 g of room temperature butter until fluffy, then add condensed milk while continuing to beat, mixing until smooth.
- Butter: 400 g
- Boiled condensed milk: 1 jar

We assemble the cake by spreading cream on each layer and decorating with fresh berries (as in the photo).
