Almond tile is an exquisite French cookie, thin and crispy, resembling traditional tiles. Its history begins in France, where pastry chefs aimed to create light and airy sweets with a refined taste. The main secret of this dessert is the roasted almond flakes that provide a rich nutty aroma and delicate crunch. The sweetness of powdered sugar and vanilla extract harmonizes with a light citrus note of orange zest. This cookie pairs perfectly with a cup of aromatic coffee or tea, and its elegant shape makes it a decoration for any dessert table.

1
Whip the egg whites with sugar and vanilla, add salt and flour.
- Egg white: 120 g
- Powdered sugar: 180 g
- Vanilla extract: 5 ml
- Salt: pinch
- Wheat flour: 45 g
2
Add melted butter, zest (to taste), and pre-roasted almond flakes.
- Butter: 60 g
- Grated orange zest: 5 g
- Almond petals: 180 g
3
Grease the parchment with oil, allowing it to soak into the paper.
- Butter: 60 g
4
Spread the mixture with a teaspoon so that it spreads evenly. The layer should be thin, round in shape, approximately 9 cm in diameter. One teaspoon of the mixture per cookie.
5
Bake at 200 degrees until dark golden color, about 6-8 minutes. Allow to bake well.
6
To give the tile a curved shape, use a flat spatula to remove the cookie from the tray and place it on a rolling pin or bottle, basically on something cylindrical.
