Mix flour (2 cups), sugar (2 tablespoons) and salt in a bowl. Add butter (100 g), chopped with a knife. The dough should be crumbly. Add vinegar (6-7% table) and water. Add more water if needed to bind the dough and form a ball. Place in a bag and refrigerate while preparing the filling (about 30 minutes).

When the filling is ready, take the dough out of the fridge, roll it out on a floured surface to form a circle.
