Mix sifted wheat flour, 0.5 teaspoon of salt, and 20 g of sugar in a bowl. Add diced butter (150 g) and crumble it with a fork. Gradually pour in ice water (50-70 ml), quickly kneading the dough by hand. You may need a little more or less water; it should come together and become elastic.

Roll the dough into a ball and divide it in half. Form 2 balls and roll each into a disk 3 mm thick and 26–27 cm in diameter. Transfer to a floured baking sheet or board and refrigerate for half an hour to an hour.

At this time, prepare the apples: peel them and remove the seeds, then cut into two-centimeter cubes. Place the apples in a deep bowl, add 100 g of sugar, cinnamon, nutmeg, a pinch of salt, and lemon juice. Mix well. Melt 30 g of butter and stir in the starch.

Take the dough out of the fridge, place the first part in the mold (trim excess if needed), evenly spread the apples on it, distribute the butter-starch mixture over the filling and cover with the second half of the dough. Pinch the edges, make cuts on top and send it to a preheated oven at 220 degrees. After 10 minutes, reduce the temperature to 180 degrees and bake until done for 30–35 minutes.
