Let's prepare a chocolate biscuit. We take 7 eggs and separate the yolks from the whites.

Whip the egg whites to a thick foam, gradually add sugar (120 g) and continue mixing, then add the yolks one by one, and after the yolks, add cocoa.

We line a rectangular mold with parchment and brush it with vegetable oil (one end of the paper should be longer for easier removal of the finished biscuit from the mold).

Place the thick batter (similar in consistency to pancakes) in a mold and put it in a preheated oven at 180 degrees for 10-15 minutes, checking with a toothpick (if you poke the finished batter, it should come out dry).

For the cream, whip the cream with the remaining sugar (130 g) until thick foam.
- Cream 38%: 250 ml

Let the baked biscuit rest, and while it's still warm, remove it from the mold with the paper, gently helping with a knife, roll it up — let it sit rolled until completely cool.

Thaw the cherries in advance and drain the juice. Unroll the cold roll, spread cream on it, sprinkle with cherries, and carefully roll it up with the seam down. Place in the refrigerator for 15-20 minutes.
