Flatbreads with sesame, seeds and whey cheese

Sesame, seed, and cheese flatbreads made with whey are a cozy European treat that combines the crunchy texture of seeds, the softness of cheese, and a slight tang from the whey. This recipe may be inspired by traditional village breads using natural and accessible ingredients. The flatbreads are hearty and nutritious, with spices like coriander and nutmeg adding a warm aroma. They can be served as a standalone snack or alongside soups, salads, and hot dishes. Mix all the dry ingredients (flour, baking soda, salt, seeds, oats or bran).
- Whole grain flour: 3 glasss
- Soda: 1 teaspoon
- Salt: to taste
- Sunflower seeds: 2 tablespoons
- Hercules: 2 tablespoons

Pour in the whey while stirring. Mix in the cheese. We get a thick dark dough. Place baking paper on the baking sheet.
- Serum: 2 glasss
- Cheese: 200 g

We portion the dough with a tablespoon.

Sprinkle with sesame and seeds and gently press them into the dough.
- Sesame seeds: 2 tablespoons
- Sunflower seeds: 2 tablespoons

Optionally, we grease the 'cookies' with olive oil and add any spices we like. I added coriander, nutmeg, and greased them with spicy oil.

We send it to a preheated oven for 30 minutes at 180–200 degrees (but keep an eye on it — ovens vary).
