Sift the flour and mix it with salt.
- Wheat flour: 150 g
- Salt: 7 g

Mix warm water with oil and pour this solution over the flour.
- Water: 65 ml
- Olive oil: 65 ml

Knead until the dough stops sticking to your hands and becomes elastic.

After that, roll the dough into a rope and knead it forcefully on an oiled surface, countertop.

Wrap in plastic wrap and leave for 30-40 minutes.

Turn on the oven to preheat.

Prepare pears and nuts, mix the sliced and peeled pieces with nuts and cinnamon, and combine with sugar (more to taste). The pear can be peeled.
- Pears: 1 kg
- Walnuts: 150 g
- Cinnamon: 0.5 teaspoon
- Sugar: 50 g

Divide the prepared dough into two parts and roll it out to a translucent state on a countertop greased with olive oil (if using flour, it loses its light flavor), or if you're not confident, roll it out to your preferred thickness.

Divide the filling into two parts and start spreading it up to half of the rolled and buttered dough.

While rolling (your hands should be oiled for this), fold the edges inward.

Then place the obtained item on the parchment, positioned closer to the strudel.

Then place the strudel on parchment in the oven, positioning the tray in the center of the oven.

Bake in a preheated oven at 200 degrees for 25-35 minutes.

After baking, brush with egg yolk on top and sprinkle with powdered sugar, let cool for 30 minutes.
