Cinnamon Buns

Those legendary cinnamon buns - dough of a tenderness that doesn't exist in nature, creamy glaze that melts in your mouth, a generous portion of cinnamon. A million calories and absolute pleasure. Don't say that a cinnamon bun is too sweet and generally synonymous with food debauchery. For the sake of momentary children's joy, you can sacrifice your principles, at least once a month. And in practice, 99% of those who demonstratively refuse dessert, in fact, also regularly allow themselves cakes and buns, they just don't advertise it.

1
Dissolve the yeast in warm milk (add a little sugar from the initial 100 grams). While the yeast rises, beat the eggs in a separate bowl.
- Milk: 200 ml
- Dry yeast: 11 g
- Sugar: 100 g
- Chicken egg: 2 pieces

2
Add softened butter (1/3 of the pack) to the eggs.
- Butter: 200 g

3
Add the remaining sugar (from the initial 100 grams) to the egg-butter mixture.
- Sugar: 100 g

4
Mix the yeast dissolved in milk with the mixture of egg, butter, and sugar, thoroughly combine in the bowl where the dough will be kneaded.
- Milk: 200 ml
- Dry yeast: 11 g
- Chicken egg: 2 pieces
- Butter: 200 g
- Sugar: 100 g

5
Combine flour (600–700 grams, depending on how much dough it will actually take) with salt.
- Wheat flour: 650 g
- Salt: 1 teaspoon

6
Add part of the mixture (flour with salt) to the yeast dough and knead it. Make gluten (mix a teaspoon of flour with a teaspoon of water, shape into a ball, and rinse with cold water). Place the resulting ball into the dough and mix.

7
After adding gluten, add the remaining mixture of flour and salt, and knead the dough. Cover the resulting ball with a towel and place it in a warm place for an hour.
- Wheat flour: 650 g

8
At this time, prepare the filling. Soften the butter in the microwave (for 7-10 seconds). Combine cinnamon and cane sugar.
- Butter: 200 g
- Cinnamon: 20 g
- Cane sugar: 200 g

9
Start the 'assembly'. Roll out the dough, which should have doubled in size, into a thin large sheet, preferably rectangular (about 40 cm by 55 cm).

10
Spread melted butter on the dough. Sprinkle the dough with a mixture of cinnamon and cane sugar. Roll the dough into a tight roll (the tighter, the better).
- Butter: 200 g
- Cinnamon: 20 g
- Cane sugar: 200 g

11
Cut the roll into rounds. You can cut with a knife or thread (thread is better). Place the resulting buns in a baking dish lined with parchment paper and greased with butter. Bake in the oven at 175 degrees for 20-30 minutes (until golden brown; then slightly brown the top to dissolve the sugar).
- Butter: 200 g

12
After the rolls are browned and ready, take them out of the oven and immediately cover them with a creamy mixture (you can brush it on or pour it). In the end, you can decorate with grated chocolate or nuts if desired. But the original taste is unmatched.
- Cream cheese: 100 g
