Dessert rolls with persimmon and apples in Russian style are a harmonious combination of tender pancakes, airy cottage cheese, and sweet, juicy fruits. Persimmon adds exotic softness to the dish while apples provide a pleasant tartness. All of this is topped with a velvety chocolate sauce that makes the flavor truly festive. This dessert references the Russian tradition of using pancakes in sweet dishes but has modern notes with its fruity filling. It is suitable for both cozy family tea gatherings and exquisite dinner finishes. The light sweetness of the cottage cheese and sour cream creates a balance between richness and freshness, while the roll shape makes it convenient for serving and aesthetically pleasing on the plate. Each piece is a small culinary delight that brings warmth and comfort.

Grate the chocolate and mix it with sugar, butter, and boiled milk. Cook until boiling. Add cream and a pinch of vanillin. Stir until smooth and then cool.

- Butter: 20 g
- Milk: 70 ml
- Cream 30%: 3.5 tablespoons
- Vanillin: pinch

For the test, we pile sifted wheat flour and make a small well in the center. We crack the eggs into the well and mix. We pour in 1 cup of milk with sugar and mix until smooth. We add the remaining cup of milk, salt to taste, and vegetable oil. We mix thoroughly.
- Wheat flour: 1.5 glass
- Chicken egg: 2 pieces
- Milk: 70 ml
- Sugar: 0.5 glass
- Salt: to taste
- Vegetable oil: 2 tablespoons

Heat the pan. Bake the pancakes on both sides; you can grease the pan with butter beforehand, but it's not necessary since we added vegetable oil to the batter. Grease each pancake with butter and let cool.
- Butter: 20 g

For the filling, mix the creamy cottage cheese with sour cream thoroughly. Add sugar to taste. Wash, peel, and slice the fruits into small pieces (remove the skin from the apples).

- Sour cream 30%: 1 tablespoon
- Sugar: 0.5 glass
- Persimmon: 1 piece
- Apple: 1 piece

We spread a cold pancake and place cottage cheese with sour cream and sugar (or without) slightly below the middle along its length. We carefully arrange the prepared fruits on the sour cream-cottage cheese mixture and roll it up. Cut into the desired number of pieces and carefully place on a plate, trimming the ends of the roll first (I usually cut into 4 pieces at a 45-degree angle). Decorate with pieces of remaining apple. Drizzle with chocolate sauce.
- Soft cottage cheese: 100 g
- Sour cream 30%: 1 tablespoon
- Sugar: 0.5 glass
- Persimmon: 1 piece
- Apple: 1 piece
- Milk chocolate: 100 g
