Tuile with almond petals

Almond petal tuile is an exquisite French cookie, light and crispy like a thin wafer. Its name comes from the French word 'tuile', meaning 'tile'. Fragile almond petals mixed with airy egg whites and sweet butter create a rich, slightly nutty flavor. These delicate wafers can be served alone with coffee or used as elegant decorations for cakes and mousses.

Use a silicone spatula to mix the almond flakes, vanilla, and egg whites.
- Almond petals: 125 g
- Vanillin: pinch
- Egg white: 2 pieces

Melt the butter in the microwave and, while it's still warm, mix it into the almond-protein mixture. Wrap the cup with plastic wrap and refrigerate overnight.

The next day, sift the flour into a bowl and mix thoroughly. On a baking sheet lined with parchment paper, place the dough with a teaspoon, leaving enough space between portions.
- Wheat flour: 2 tablespoons

Preheat the oven to 150 degrees. Press each potential cookie with a tablespoon dipped in cold water onto the baking sheet to form flat round discs.
