Berry sand pie is a classic of Russian cuisine, combining tender crumbly dough and bright, refreshing berries. This dessert emerged from the traditions of making sand dough that perfectly holds juicy fruit filling. The pie's flavor is rich and contrasting: the sweetness of the vanilla filling beautifully complements the light tartness of fresh berries. It is especially good warm when the buttery dough melts in your mouth and the berries reveal their freshness. Such a pie is perfect for family tea time or a cozy evening with loved ones. It can be served with a scoop of vanilla ice cream or light yogurt cream for an extra flavor note. The simplicity of preparation makes this recipe a favorite choice for home baking that always delights with its taste and aroma.

Sift flour with salt into a mound on the table or in a food processor bowl. Add sugar. Place diced cold butter on top. Chop the flour with the butter until it resembles fine crumbs. Add egg yolks one at a time, mixing the dough each time (you can substitute whole eggs or cold water instead of yolks). Add 1 tablespoon of sour cream. Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for 1 hour. You can also place it in the freezer for 15-20 minutes. If it gets too cold, let it sit at room temperature for a bit.
