Financier with blueberries is a refined treat of French origin that emerged in the 19th century. Originally made for business people near Paris's financial district, hence the name. The main feature of financier is its lightness and rich nutty flavor due to almond flour and browned butter. In this version, blueberries add juiciness and pleasant acidity, complementing the sweetness of the batter well. Financiers are perfect with morning coffee or as an exquisite treat with tea or dessert wine.

Preheat the oven to 200 degrees. Grind the almonds into flour, add sugar, salt, and flour. Whip the egg whites until soft peaks form. Mix the two mixtures and add vanilla.
- Almond petals: 125 g
- Powdered sugar: to taste
- Salt: 0.3 teaspoon
- Wheat flour: 60 g
- Egg white: 5 piece
- Vanilla extract: 1 teaspoon

Heat the butter in a saucepan, stirring constantly, until it turns brown. Add to the mixture. Add blueberries. Pour into molds. Bake for 15-20 minutes. Dust with powdered sugar.
