Cottage cheese corners with apples are delicate pastries with thin crispy layers of dough and juicy fruit filling. Their roots trace back to Russian cuisine, where cottage cheese products have always been popular due to their nutritional value and airy texture. The sweet-sour taste of apples combined with tender cottage cheese creates a harmony of textures and aromas, while the sugar sprinkle adds a pleasant caramel crust. These corners are perfect for a cozy tea time or as a light dessert. Their versatility allows enjoyment both warm and chilled, revealing new flavor nuances. The simplicity of preparation makes the recipe accessible even for novice cooks, and the result consistently delights guests and loved ones.

1
Grate the margarine.
- Margarine: 500 g
2
Mix with the other ingredients (we take only 3 cups of flour — the rest for kneading). The result is a rather stiff but elastic dough.
- Wheat flour: 3.5 glasss
- Cottage cheese: 500 g
- Baking powder: 0.5 teaspoon
3
Peel the apples and cut them into small cubes — the smaller, the better.
- Apple: 2.5 pieces
4
Now pinch off small pieces of dough and roll them into a flatbread with a diameter of a saucer and a thickness of 3-4 mm.
5
Sprinkle half of this flatbread with sugar to taste — everyone has their own preference.
- Sugar: to taste
6
Fold the flatbread in half and sprinkle sugar and our apples on half of that half.
- Sugar: to taste
- Apple: 2.5 pieces
7
Fold in half again and make cuts through the corner, about 1 cm long, then sprinkle with sugar on top.
- Sugar: to taste
8
Bake at 180 degrees for about 25–30 minutes.
