Gül tatlısı is an exquisite dessert of Turkish cuisine, meaning 'rose sweetness'. Its roots trace back to Ottoman traditions where such treats symbolized refinement and luxury. The delicate dough made from semolina and kefir is shaped into beautiful 'roses', baked to a golden hue, and then soaked in fragrant mandarin syrup. The taste combines sweetness with citrus freshness, while the texture is soft inside and lightly crispy outside. Gül tatlısı pairs perfectly with a cup of strong Turkish tea, creating an atmosphere of coziness and Eastern hospitality.

1
Melt the butter, add semolina, and mix.
- Butter: 130 g
- Semolina: 1 glass
2
Pour in sunflower oil.
- Sunflower oil: 1 glass
3
We pour in the kefir.
- Kefir: 0.5 glass
4
Add baking powder, salt, vanillin, and crack in an egg.
- Baking powder: 0.5 teaspoon
- Salt: pinch
- Vanillin: to taste
- Chicken egg: 1 piece
5
Add flour. Knead the dough and roll it out, making it not too thin.
- Wheat flour: 2.5 glasss
6
We make circles with a glass and stack four circles on top of each other to resemble the rings in the Audi logo.
7
Then we start rolling from one side into a tube, and on the edges, we see our 'roses'. We cut in the middle and place it in the mold with the 'rose' facing up. We do this with all the dough.
8
Bake in the oven at 200 degrees until golden brown.
9
Meanwhile, we prepare the syrup. Mix sugar with water and mandarin juice, boil until the sugar is completely dissolved. Let it cool slightly.
- Water: 1 glass
- Tangerines: 1 piece
10
We transfer the roses to a smaller dish, pour syrup over them, and let them soak.
