In a small pot, heat water, then add sugar. Bring the syrup to a boil, stirring until the sugar completely dissolves, slightly cool it down, and add half of the ground almonds.
- Water: 150 ml
- Sugar: 150 g
- Almond: 300 g

Whip the egg whites and, while continuously whipping, pour in the syrup. Heat the mixture for 15 minutes over low heat, stirring, then cool to room temperature.

Gradually add flour to this mass and knead the dough for 10 minutes until the mixture becomes homogeneous.
- Wheat flour: 150 g

Using a spoon, place dough onto a greased and floured baking sheet to form flatbreads weighing about 30 g. In the center of each flatbread, secure half of a peeled and dried almond kernel.
- Almond: 300 g

Bake for 30 minutes at 180 degrees, then cool.

Boil syrup from water and sugar and brush it on the cooled cookies.
