Prepare a round pie pan with removable edges. Place an empty mixing bowl in the freezer for at least 10 minutes. Then mix cream, sugar, coffee in it and whip everything on high speed for about 2 minutes until stiff peaks form. Gently fold in the mascarpone, mix and let it sit for a while.
- Cream 30%: 470 ml
- Sugar: 1 tablespoon
- Instant coffee: 2 tablespoons
- Mascarpone cheese: 450 g

Now start layering the dessert by placing wafers at the bottom. Spread a layer of cream on top. Continue layering, alternating wafers and cream. The last layer should be cream. Cover the form with plastic wrap and refrigerate for at least 8 hours, preferably overnight. Before serving, dust with cocoa through a sieve and remove the edges from the form.
