Savoiardi cookies, or 'ladyfingers', are a delicate and airy treat from Italy that has become an essential ingredient in the famous dessert tiramisu. Its history dates back to the 15th century when it was created specifically for the Dukes of Savoy. The cookie has a light, slightly crispy crust and a soft, melt-in-your-mouth texture. Its flavor is subtly sweet with delicate vanilla notes. Due to its airy structure, savoiardi perfectly absorbs creamy and coffee syrups, becoming the base for many exquisite desserts. It is most commonly used in tiramisu but also pairs wonderfully with tea, coffee, or fruit creams.

Preheat the oven to 180 degrees.

Prepare a pastry bag with a round tip, 1.25 cm in diameter.

Whisk 2 tablespoons of sugar with the yolks until pale yellow. Add vanilla and flour.
- Sugar: 5 tablespoon
- Chicken egg: 3 pieces
- Vanilla sugar: 0.5 teaspoon
- Wheat flour: 65 g

Whip the egg whites, gradually adding 3 tablespoons of sugar.

Mix the whipped yolks and whites, and place the resulting mass in a pastry bag.

Lay baking paper on the tray and pipe cookies 7.5 cm long from the pastry bag onto the paper.

Bake for 8-10 minutes. Then sprinkle with sugar or powdered sugar.
