Preheat the oven to 200 degrees.

Rub the butter, flour, and salt by hand until crumbly.
- Butter: 115 g
- Wheat flour: 225 g
- Salt: pinch

Add lemon zest, salt, and sugar.
- Lemon zest: 1 piece
- Salt: pinch
- Sugar: 2 tablespoons

Add one tablespoon of amaretto and water at a time. Knead the dough, wrap it in plastic wrap, and refrigerate for 1 hour. Once the dough is chilled, divide it into 4 round pieces and roll each circle to a thickness of 0.5 cm.
- Amaretto liqueur: 2 tablespoons
- Water: 2 tablespoons

Cut the peach in half and make incisions with a small knife to create a fan shape. Place half of the peach in the center of the circle and pinch the edges. Arrange the galettes with peaches on a parchment-lined baking sheet, placing a piece of butter on each peach and sprinkling with sugar to taste.
